Why a symbol often beats an emoji
A symbol is ordinary text. It takes the colour and weight of the words around it, it does not turn into somebody's artwork on the other end, and it gets through fields that refuse emoji outright: usernames, some form inputs, a lot of older software. ✔ in a list reads as a tick; ✅ reads as a green plastic sticker.
The trade is support: a handful of these are drawn as emoji on some phones, and a few of the rarer ones fall back to a box in old fonts. The common ones here, the arrows, the ticks and the punctuation, are safe everywhere.
Building a divider out of them
The lines and blocks group is what the border pieces on emoji art are made of, and the border generator assembles them for you. For anything else, the tray at the bottom collects what you click, so a divider of 5 symbols is 5 clicks and 1 copy.

Reading about an emoji, and using one
A catalog tells you what an emoji means and copies it for you. Emojery is what turns it into a reaction on the page you found it for, next to everyone else's.
